Ingredients
02 Sweet Potatoes, cut into chunks
1 cup Spinach, washed and roughly chopped(add more if you like)
1 can Coconut Milk
01 onion, finely sliced
2-3 tsp curry paste, depending on how hot you like your curry
Salt to taste
Method
Fry the onions until very soft, for about eight minutes. Stir in the paste and fry for two more minutes. Add the coconut milk and sweet potatoes and cook until just tender, about 10 minutes. Add salt to taste. Stir through the spinach until wilted. Serve with naan bread.
* If you don't have curry paste add one teaspoon of curry powder,1 teaspoon of chillie powder and a teaspoon of garlic(or less)
