POTATO TOFFEE

Ingredients:-

 1 pound Potato’s
 1 Pound Sugar
 01 small tin of Milk Made
 0.1 Margarine or butter

Method:-

 Peel & boil the potato’s well, mash it till its smooth & keep aside.
 Mix the Milk made, Sugar & Mash potato’s together in a non stick saucepan.
 Now keep on stove on a normal fire/Temperature
 Add cloves if needed and a drop of vanilla.
 Stir well till sugar is well dissolved and mixture starts sticking off the pan.
 Pour the contents into a greased tray and even it out to dry.
 Cut out square pieces and leave to cool.
 Enjoy when cool.

Spinach and Sweet Potato Curry

Ingredients

 02 Sweet Potatoes, cut into chunks
 1 cup Spinach, washed and roughly chopped(add more if you like)
 1 can Coconut Milk
 01 onion, finely sliced
 2-3 tsp curry paste, depending on how hot you like your curry
 Salt to taste

Method

Fry the onions until very soft, for about eight minutes. Stir in the paste and fry for two more minutes. Add the coconut milk and sweet potatoes and cook until just tender, about 10 minutes. Add salt to taste. Stir through the spinach until wilted. Serve with naan bread.

* If you don't have curry paste add one teaspoon of curry powder,1 teaspoon of chillie powder and a teaspoon of garlic(or less)

Coated Chicken, baked potatoes and Coleslaw Salad

Make sure to prepare the salad first as it needs to be kept in the refrigerator for at least 2 hours.

To make the Chicken:
4 pieces skinless Chicken (boneless or with bones-up to you) dipped in milk or water
Coating mix
1/2 teaspoon Garlic powder
1/2 teaspoon chillie pieces
dash of pepper and salt

Heat oven to 400 degrees
Mix all ingredients except for chicken in a bowl. Take each piece of chicken on a fork and drain excess and coat with mixture and place on a baking dish or cookie sheet.
Place in oven for about 45 minutes if with bones and about 20 minutes if boneless.

Baked Potatoes:
5 potatoes cut into 1/4 inch squares
2 teaspoons Garlic
2 teaspoons dried parsley flakes
dash of salt and pepper
Extra Virgin Olive Oil a dash or two

Toss all the ingredients together and place in the oven. Bake for about 45 mins to an hour until nice and crispy.

Coleslaw:
1/2 small cabbage grated
7 baby carrots or 2 large carrots shredded
2 tablespoons mayonnaise( any kind you like)
1 tablespoon of Extra virgin Olive oil
1 teaspoon vinegar
1 tablespoon milk

Beat the mayo, EVOO,vinegar and milk together with a fork.Add into the cabbage and carrots and mix well. Refrigerate for at least 2 hours.

Home made Nasi goreng (kinda like a stir fry rice)

This recipe is for 4-5 persons

to make the Rice:
2 cups basmati rice
2 chicken cubes or 3 teaspoons of Chicken both base(loose powder)mixed into 4 cups of water
2 tablespoons oil

3 or 4 chicken breasts cut into small 1/2 inch pieces
4 to 5 Yellow,Red and Green Peppers
2 onions chopped
2 carrots grated or chopped length-wise(1/2 inch)
1/4 cabbage cut up finely
2 or 3 teaspoons of soy sauce
4 teaspoons ketchup
3 teaspoons chopped garlic
2 teaspoons chilli powder
3 teaspoons chillie pieces
salt and pepper to taste
oil and butter -3 Tablespoons oil and a tablespoon of butter(Or less if you prefer)
4 fried eggs

To make the rice:
Heat oil in medium-high fire in a 4 quart pan. once heated put the rice into it and let it fry. keep stirring. after about 3 or 4 minutes add 4 cups of water and the cubes in. stir and make sure the cubes are dissolved.
Once most of the water evaporates reduce heat to low and place a cover on and let it on for about 15 mins. To check if it's cooked, take a fork and check it. keep aside.

Heat a wok with oil and/or butter depending on how much you want to add. once heated add the chicken pieces and let it fry and cook. when chicken is almost done add onions and garlic and let it blend and fry together. then add peppers,carrots and cabbage and let it all fry and cook. Add soy sauce, salt and pepper. Let it cook. Then add the chillie pieces and powder and ketchup. Once all cooked add the rice and mix it all up well.
Serve in plates and place the eggs on top of the rice.

You can eat it with a cucumber salad on the side and garnish with parsley leaves and green onions.

Note- This is a bit spicy so you can reduce the chillie and add different spices that you like and make it your own.

Classic Chicken Curry

This is my most loved and favorite dish that reminds me of home. it's easy and takes about 1/2 hour to 45 mins to be ready.

4 pieces chicken-legs and/or thighs
1 onion chopped
1 tablespoon oil
2 or 3 chillies- anything u like
1 1/2 teaspoons curry powder
2 teaspoons garlic
2 teaspoons chillie powder
2 teaspoons chillie pieces
3 teaspoons ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
salt to taste
1/4 cup water

add all ingredients except oil,onions and peppers together and let marinate for as long as possible.
heat oil in pan. once hot add half of the onions and let it fry in medium-high heat.
Once the onions are getting brown in color add the chicken with marinate and let it slightly fry. turn sides.
Reduce heat to low-medium and add water,stir and add lid on and let it cook for about 15 to 20 minutes.
once the chicken is cooked, increase the heat to high and add the onions and peppers and let it all fry together. Add more ketchup if you like.
Heat it hot with some rice or cous-cous.

*For a slightly different flavor you can add a teaspoon or two of peanut butter into the marinate.
